American wagyu, I presume? I bought some a couple of years ago to use in curry and when cooked right, it just melts in your mouth!

Last night, I made some Hot and Sour soup with lots of ginger, wood ear and shiitake mushrooms, a long scallion, and pork mince.

There's different grades of wagyu too I take it?

I mean as someone in the cattle industry(rancher),I've heard of it, but the stuff I've seen has a lot more fat in-that  just looks like our normal beef.

This morning – cooked breakfast & tea at The Gongoozla's Rest cafe, which is actually a floating narrow boat permanently moored in Braunston Marina, which lies at the crossroads of the Grand Union & Oxford canals, unfortunately since Covid-19 you're not allowed to go into the actual boat
