Ah, greek mythology! I love that stuff. But may I correct you: Fluttershy is not a normal nymph, she is a dryad. (Forest nymph)

I think You are confusing it with the myth/legend of Daphne who turned into Daphne the plant/tree to escape from Apollo god of music. He and her were struck by the arrows of Eros/Cupid. Apollo had mocked cupid and his instrument for its power to kill/change the world. Cupid said that while Apollo's arrows strike the bodies he strikes hearts(or something like that). To show his prowess Cupid/Eros struck him with an arrow to fall in love while he struck Daphne with the arrow that repelled love. The rest is her becoming the daphne and Apollo made that plant/tree (i think its a plant) holy and it was used by oracles like in Delphi.

 

Myth geek rambling still on.

 

However... There was couple that was in love a lot and i believe it was Deukaliwn and Pyra. Such was their love that they wanted to stay forever together and the gods granted that wish and turned them into trees.

 

However there is a myth that i am sure about that says there was a woman who turned into the almond tree.
