I think they all just have first names, and that the "Dash" in "Rainbow Dash" and the "Sparkle" in "Twilight Sparkle" are just extensions of their first name.

Pretty sure it's just Rarity. Ponies don't generally have last names, at least in a family sense. I mean, Apple Bloom and Big Mac have different second names, but they're still part of the Apple Family. Rarity just has a one name, like Fluttershy and Scootaloo.

In reality, as others have already said, ponies don't seem to have a last name system. So Rarity is her full name.

It's possible that the names we hear for the ponies aren't their full names. We already know "Pinkie Pie" is short for "Pinkamena Diane Pie".

 

So they might really all have a last name we don't know about.

 

"Applejack" might be short for "Jacqueline Apple", for instance. Which would make "Apple" a surname shared by the members of the Apple family.

 

So it's possible Rarity has a full name with last name we don't know about.

Well everypony, the only thing to really support that they in fact DO have last names, is when Pinkie Pie says in the Apple Family episode, how much she "loves being a pie", but how awesome it was to find out she was an "apple". Or something to the effect.

I always thought that Equestrian naming conventions are not based around families per se, but are more descriptive of that particular pony's character or destiny. Somewhat similar to American Indian names.

In all seriousness though. It seems that there's completely different naming conventions in Equestria. The idea of surnames may not be meant as a separation from their regular names and can be used when they are called upon as well. Kinda like clan names are passed onto it's members in spite of their blood relations but they have individual names to tell them apart.

Unless it's a ninja clan. Ninjas have no names.

In "Ticket Master", Rarity is talking about how she will make her debut at the Grand Galloping Gala as "Rarity Unicorn". She didn't use "the", so that makes her last name Unicorn.
