Haggis is pretty good. Most of the real flavour comes from the herbs and spices put in it, and a lot of the bulk comes from the oats. And you don't eat the stomach anyway - it's just the container. It's really not conceptually that different from sausages, which were traditionally made from the cheaper, tougher cuts of meat and offal, padded out with breadcrumbs, and used intestines for the casing.

 

In other news, black pudding is delicious.

Something I wanna throw in: Sheep Lung in the US is banned in terms of consumption.  Furthermore, Americanized Haggis doesn't use a Sheep's Stomach, but a plastic casing.
