The reson is quite simple, he is just a background pony if he had his own episode that wouldn't be fair to other ponys. Id rather have a Dr. Whooves episode.

Big Mac usually has very few lines because its funny. He amuses people by answering just about everything with a "yep" or "nope". Also, the way he says them is charming.

 

Now there have been episodes were he talks more and he has been featured a lot in season 2. He is the most popular stallion in the show after all. I think its quite likely that he will have an episode in season 3, possibly exploring his relationship with his sisters.

He,Shining Armor,Fancy Pants and Soarin are the only sensible stallions in MLP.Would be nice if all of them came on the show in their own episode.

Giving him a few more words is fine. (Personally, I prefer it.) But do we really need an episode devoted to him? I mean he's great, but not that great.
