Kingdom Hearts always has had fantastic OSTs. Up to III, that is. I feel like III focused less on Shimomura's excellent, iconic composition style and tried too hard to be cinematic. Cinematic/movie-style music is very uninspiring to me, so a lot of it is forgettable.

 

Pokemon also has had some excellent tracks through some of its generations:

There are so many games I play that have great soundtracks, so it's hard to pick just 1. Some that come to mind are: Scooby Doo Night of 100 Frights, Twisted Metal: Black, Hot Wheels: Beat That, Twisted Metal: Head-On, TF2, Speed Racer: The Video Game, SpongeBob: Battle for Bikini Bottom, and so many more.

Nobuo Uematsu's work on the Final Fantasy games has all been really good, as well as The Last Story, which he did as well and is lesser-known.

Chrono Cross has an amazing soundtrack.

I love the music from almost all Nintendo games. The Golden Sun series, Donkey Kong Country series, Star Fox series (especially Adventures) have a special place in my heart. Spike Chunsoft always makes amazing soundtracks. Grandia has an amazing soundtrack! And so many others.
