Another leftovers special – a boiled potato with parsnip, mashed, fried egg on top, plus mushroom and tomatoes fried in olive oil with a clove of garlic, chopped, salt & black pepper & ketchup to taste. Sounds like an unlikely combination but was really good!

Leftover potato soup. I halved the recipe when making it, but completely forgot that fact after it finished cooking when it was time to add the cream cheese. It's still edible, but it's super heavy and cream cheese forward. Luckily it's not overwhelming, but it's not great, either. Also, I think the soup took as much cream cheese as it could, so even after letting it cook for an additional half an hour there were still little chunks of it floating around, so I gave up and accepted that I'd basically made cream cheese soup instead of potato soup. The worst part is it's a three day meal, so I still have one more bowl of it left to eat
