(Azuhotl is based off of quetzalcoatl, but his  eyes were on the sides of his head...)

No he's not. Quetzalcoatl is the Feathered Serpent.

Ahuizotl is literally an ahuizotl, a totally different mythical creature.

It being such a rare creature in media, the artist just moved the eyes to a different place to shake things up. Because seriously, no one's going to whine about the placement of an ahuizotl's eyes like they would if you, say, made a unicorn with a horn on it's nose rather than it's head.

 

Personally, I like the elongated skull. It's weird in a really lovable/fascinating way.

And besides, eyes on the SIDES of the head makes no sense for an allegedly predatory creature. Predators have forward facing eyes to focus on the prey in front of them. Prey animals have eyes on the sides of their heads to widen their field of vision and see the predators coming.
