As for the OP, gotta go with Cozy Glow. This character was made with unique expressions in mind. When she gets into evil mode, the animators exercise massive liberty in her expressions, and boy, are they priceless! Here are a couple:

My vote is for Rainbow Dash. 
 

Followed by Cozy Glow.  Even though I didn’t really like her and found her obnoxious, she made some interesting faces.

Starlight has the best expressions in my opinion. And most of them. They are just my taste. Applejack also completely nails it for me.
