The stallion is Sky Warden and the mare is Earth Saphina (stands for "Subphoena" and usually called "Saphie" by Sky Warden). As for the mare's Cutie Mark, it's a ball of earth (just like you usually make with your hands while you were young) with a young sprout on top of it.
