I usually don't like opening's, but I do have a few that I don't skip.

Most theme song's suck, but the lyric's to Monk's opening are catchy and fun, and the Dexter theme song, though understated and very simple, still manages to be chilling and intriguing.

This is just awesome.

 

It fit's the themes of the show so well and the music is just chilling. It's an excellent intro.

One of my absolute favorites is the Spongebob Squarepants intro. It has been the same after all these years and I still love it beyond belief.

 

The Attack on Titan intro is also one of my favorites in the Anime genre, even if it still is pretty standard overall in that genre. 

 

Then there is the opening to Elfen Lied, which is dark and depressing much like the show but it has beauty to it in the music. 

 

The FiM opening is of course on my list, due to ponies and whatnot.
