I have all of you beat. I choose Princess Celestia. I think her royal nature, and her personality would give me a smooth ride, and she's able to fly.

Hmm... Alright, lets evaluate my options:

 

-Rainbow Dash would break mach1 and I would either fall to my demise or disintegrate.

-Rarity could be plausible, given she even lets me ride on her back into victory.

-Fluttershy... I would be too scared to ride. Maybe I'll break her back or something. And then I'll feel absolutely horrible for the rest of my miserable life. I'd much rather break her back through a hug, anyway.

-Twilight Sparkle... Hmm... Yep, an option, definitely. She'd lecture me on Quantum Physics or something while we fly through the air, with definitely NO crashes whatsoever.

-Applejack... Hmm... She's rode in Rodeo's before, so she'd think it was degrading of anyone to ride on her back, and start kicking with her back hooves, probably resulting in a lot of broken bones. For me.

-The Pink One is an option, indeed. Though she is a force beyond anything's imagination, and normally it would be disrespectful to ride being greater than gods, The Pink One has shown that she'd find anything fun. So, an option indeed.

-Lulu would probably accidentally yodel in her beloved Royal Canterlot Voice midair, and I would be blasted back by the force. Ya know, Usually I'm the one using Thu'um to blast things away, and honestly, I'd rather not be on the opposite end of that. Especially while flying on a blue winged unicorn.

-Celly... Celly, Celly, Celly... Hmm... Ya know, this could be an option, aswell. She's probably believe it's all in good fun, and then we'll ride/fly into the sunset, ready for adventure. If, ya know, she didn't have a country to run. Eh, she's probably just throw Lulu in the throne room and let her do the work. 'Cause she's goin' Piratin' with a hairless ape and Pipsqueak!

 

So, lets see here... My options are Rares, The Pink One, Twi and Celly. Hmm... Difficult choice, eh. Well, due to the competitors, Rares goin out, sorry. As much as you are a wonderful soul, I'd probably fit personality-wise with the others. So, Pink One, Twi and Celly...

 

 

And Celly wins! What, did you think I'll miss out on fluffy warm fur and feathers? Sure, if it were hanging out with the pony, it would... Still, uh, be very much Celly... If it was a group, though, they would join! Rares and Lulu would be able to join too!

 

In anycase, in conclusion, I would ride on the fluffy back of Celly, into the sunset, and be pirates.

Probably Dash. She can fly, go super fast and if I fall off she has a pretty good track record for rescuing ponies.

Since he's slow and easy going and I haven't ridden a horse for quite some time, I'd think I'd like to start off with Big Macintosh. That way I'd get to understand his true desires and what he wants. 

 

Then eventually I'd graduate to some of the Mane 6 such as Rarity, Fluttershy, Twilight etc. 

 

I'd use the pony rides for a conversation with each of them. I'd probably discuss the events of the show, what fans speculate, what I'd speculate and so forth.
