Her restaurant will be serving French delights with live music (( Fancy music. )). They'll especially be serving those 600$ meals for only a small portion.

Pinkie Pie would have a pastry restaurant that specializes in cupcakes and different types of punch.

 

Rarity would have a high class 'you-must-be-on-the-list' restaurant that serves lobster, and caviar and rich people stuff.

 

Rainbow Dash would have a pizza and energy drink restaurant.

 

Fluttershy would have a restaurant that only served salad and the beverages would either be water, milk or juice.

 

Apple Jack would have something like Cracker Barrel probably. And the desert will be something with apples in it.

Rainbow Dash will without doubt be a fast food restaurant some where along the lines of a McDonald. Not a McDonald but similar to a McDonalds.

Fluttershy will definitely server vegetarian only food. I just cannot see Fluttershy serving meat as she is a animal lover.

And finally Pinkie Pie will serve the most delicious food that are filled with suger. Ranging from Cake, Cupcakes, Donuts, to large bowls of ice cream.

That's a weird idea, but here's what I think they'd serve:

Applejack- apples apples apples! The menu is all apple stuff, I mean what else?

Fluttershy- a resturant mostly for animals, with veggies for the herbivores and fish for the bears.

Pinkie Pie-she'd probably just make a resturant offshoot of the Sugarcube Corner bakery.

Rarity- a fancy place that is fancy with tea and marshmallows(sorry, Rarity herself isn't on the menu).

Me and a friend were discussing this the other day, and the amount of activities these ponies partake in, I don't think it would matter what they ate because I'm sure they work it off instantly. Example, Pinkie Pie eats and ginormous about of sweets but she also jump/leaps everywhere. I'm sure if I jumped everywhere I'd get tired instantly.
