We have actually used these two as well. The staff has changed the loading gif these two times, however adding an option to customize it isn't really very necessary and is therefore not a priority. You're only seeing the image for max 3 seconds anyway. However, I would like the staff to change it more often. We should use the other ponies in the main 6 as well. Changing it is not very hard and there are plenty of trotting gifs which are free to use.

That's a great idea, I hope they add that aswell, not only ponies and main chars, all the characters from the MLP series.

Is it possible to have multiple trotting pony gifs and everytime something is loading a gif is chosen at random to be played.

 

Sometimes it could be Applejack or sometimes it could be Luna.

It surely is possible, but those gifs need animating I think so it'll take some time.

I have seen pixel trotting gifs of a LOT of MLP characters and I am pretty sure their creators would not mind them being used.

We currently have one Designer in Poniverse who is extremely busy with higher priority projects. HOWEVER, we rely heavily on community contributions to many art based projects here, from emotes to banners. If you or anyone can create a new loading pony, I'm sure it will be considered.
