I wouldn't say Pinkie Pie actually jokes around too much. It's more like she doesn't know when to keep her mouth shut, which makes her annoying on occasion. Sometimes, like in The Last Roundup, it works amazingly and actually fits into the plot. But other times, especially in later seasons, it just starts to get redundant.

I'll admit; I like her character on a certain level... but her schtick is honestly just exhausting sometimes...  Like I said, she's a perfectly fine character... but she definitely has her ups and downs, if you ask me.

Pinkie Pie doesn't actually joke around that much, really. She's just energetic.

Her energy can definitely get exhausting, especially when it feels inappropriate, but... You know, it's Pinkie Pie. It's how she is.

I think the best Pinkie Pie moments are either when she gets her own episode and those moments are dumbed down in favour of actual character, or when she is not present at all.
