I would fight Celestia in a match. I'd love to see what she's really made of. Even if I lost it would be worth it just to battle against her. 

Then, in the off chance I won, I'd date her student, Twilight.

I guess I'd fight Celestia. Most of the other options seem a bit too strenuous for me. If I fight Celestia I can resort to low tactics like crying and feigning injury in order to gain an upper hand. The really nasty villains wouldn't fall for any of that. I'd probably still lose, but it would be fun just to mess with her mind a bit.
