Why is Big Mac so quiet?

Well, he might seemed a bit quiet in the show, but I think we can expect more words out of him in the future. xD

 

Also, I wouldn't mind if it stays as it is because just Eeyup and Nope is enough for me.

Some people just don't like talking unless its absolutely necessary, extremely shy, or both. There doesn't have to be a reason behind it.

It's for the funny factor. Especially in the last season, you can notice great jabs about him being silent.

 

Alternatively, it's because he's been used as a slave on the fields sinvce early childhood and never developed social skills.
