Well I wanted to see a minotaur and thought there would never be one, but then we got Iron Will, who was a pleasant surprise. I think a nine-tailed fox or a genie pony would be nice to see next though.

I dunno, if Pokemon can get away with that, plus golems and basically God himself, I'm sure My Little Pony can get away with adding a sea serpent. Granted, a MLP style Levithan would be much different then the actual one, just look what they did with the Minotaur. : P

 

Also, I would love to see Wyverns, Salamanders, and Ghosts. Pony Ghosts, that is!

Well what I meant was the fact that depending upon what translational or theological interpretation you take, "Behemoth" can be either a Bull that's about 1000 feet tall, a common Hippopotamous, a Cow with a penis the size of a tree, or a dinosaur.

I'm not caught up with Season 2 yet, so I'm looking forward to seeing the minotaur.

 

I'm thinking some supernatural entity like a shapeshifter / doppelganger / changeling could have potential if done correctly.

A ponyfied version of a Siren would be pretty cool. Minus the drowning people part.

So I did some searching on the forum and didn't see any topic thus far addressing the wildlife (non-pet animals) in FiM. Please excuse me if I missed it. I had a random thought and began wondering what we might see in season three when it comes to new creatures. We've seen some old, new, and bizarre stuff besides the normal bunnies around Fluttershy's. For example, the Cerberus, Cockatrice, and Manticore. What does everypony expect to see in upcoming episodes and what would you like to see? Personally, I'm interested in seeing what other fantasy-themed creatures they might include. A rock golem would be cool.
