Would love to see an episode starring the big guy. He would be the perfect straight man.  Like there would be a huge explosion in the middle of town and he'd just turn and look and go "Eeyup" nonchalantly and then carry on with the rest of his day.

I really want an episode about Big Mac. Maybe one which shows the daily routine and we witness the Mane 6 going off on their adventures from his point of view.

Another possible idea for an episode would be one that highlights Big Mac and Applejack's sibling relationship.

Big Mac needs to get some more screen time.

I think Big Macintosh should hook up with Maud...  Kidding, kidding...

Really, there should be a Big Macintosh episode.  I think he should go off on a visit to the crazy cat-lady aunt and get Troubleshoes to take care of his farm work while he is gone.  He could go and fix up the cat-lady aunt's place and we could have "meanwhile, back at the ranch" moments with Pinkie Pie throwing Troubleshoes a party, and Rarity being alarmed by his size, and Rainbow Dash trying to outdo him in some random Dashie way.  Big Macintosh could expand the crazy cat-lady's house, which is bursting at the seams with felines, and convince the aunt to take Troubleshoes on as a caretaker for her place.  Troubleshoes could become a cat whisperer, (with Fluttershy's help), and have conversations with Big Macintosh about the downside of being enormous.

he pays an RPG card game with Spike (watch Cutie Map Part1)

He talks about hoofball(football) cards. That's not a game, it's just a collection but at least we know Big Mac is a fan of the sport.

I'd love some kind of "a day in my life" episode. Basically all his lines would be the usual "eyup" and "nope", but then he would act as a narrator for the episode so we'd hear his real thoughts.

I think Celestia should get her own episode sooner than bland secondary characters that don't even talk

True Celestia is the most episode-needing character of all, but I do think Big Mac should get one as well.

Spike gets episodes pretty frequently, so they could have a dual-character episode with them to keep it from feeling odd focusing on a side character. Heck, maybe Rarity's dad could make an appearance too, if the plot is hoofball related :)

I wrote a script for a Big Macintosh episode.  Here is Mac's dialogue in full:

"Nope."

"Eeyup."

"Eeyup."

"Eeyup!"

"Nope."

"Nope!"

"Eeyup!"

"Nope."

"Nope!"

"Eeyup."

"Eeyup."

"Nope."

Soliloquy. Have a lot or most of the episode consist of an internal monologue of his mental commentary about his day. Verbally he says little, but he thinks a lot as he walks around.

We really need a Big Mac episode, he's like the... something. I don't know stuff. He's great anyway. You get what I mean.

Also, I think Applebloom is sort of... scared/something of Big Mac, because in 'Bloom and Gloom' when she get's to the part where her cutiemark isn't an apple, Big Mac says almost everything, and the rest is "eeyup", or "nope", or something Applejack  and granny Smith say in Big Mac's voice... But that's just my suspicions... :/

From what I can tell, Big Mac is almost a father figure to both her and Applejack. In another episode (I'm not remembering which one at the moment), Applejack tells Apple Bloom, "I'm going to tell Big Macintosh on you!" And in Hearts and Hooves Day, we see him giving Apple Bloom a punishment, and he's the only/oldest male in the immediate family, so it makes sense.

As far as a Big Mac episode, I definitely need one. My fingers are still crossed that the wedding in episode 100 is going to be him and Cheerilee.

But it probably will be somepony else.

He was "dating" Cheerilee (the teacher pony) in the episode Hearts and Hoove's Day. They were under the influence of the love potion the CMC gave them, so that's why they were dating.

It is hinted that Big Mac and Cheerilee began to go out after the potion wore out.

I guess you could say that. In the episode "Filli Vanilli", there was a scene where Cheerilee winked at Big Mac.
