Try Princess Celestia! While she can be a bit of a challenge for beginners, she is also very fun to draw. I would also recommend the rest of the Princesses.

 

But it's up to you, really. Whenever I can't decide on what pony to draw, I just choose a random one I have yet to draw and go on with it.
