The most memorable one for me is the Rainbow Road from the 3DS version. I really enjoyed all the unique places it went and the challenge it presented.

 

N64 Bowser's Castle and GBA Sky Garden also stick out for me.

Mario Kart 7's Rainbow Road. It's next to perfection in my mind and I love playing it; the stage itself is stunning and there's so much room for drifting and tricks.

All the Rainbow Roads, they are always the last course you race on, and they have very catchy music (even though they kind of remixes of the very first one well except the first one) and their designs are really nice.

DK Pass and Mario Kart Stadium was my favorite.

 

Now:

RAINBOW ROAD i can assure you that map was Rainbow Hell for me on all consoles.  Loved the music, hated the course.

Rosalina's my favorite character too!! As for the courses, my favorite course is probably Koopa Troopa Beach on the Mario Kart 64. I love that I can get the cave shortcut 9/10 times even without a mushroom. Rainbow Road on the Wii version was freaking fun! I used Rosalina to beat that stupid ghost! Took me a while, but I finally found a rhythm for it! Drift that half-pipe: its trippy!

 

I always play as Rosalina or Peach (Mario and Luigi drive me INSANE!! ugh)

Personally Rainbow Road is always my favorite course in Mario Kart and my favorite one would have to be the Mario Kart 7 version.

Besides that I have always been found of Daisy's Cruiser and was really happy to see it return in Mario Kart 7.

My favorite Mario Kart course is Rainbow Road, mainly because it's so amazing and cool and the chain chomps are crazy on that course. I'd always get hit by them, but it was funny getting hit by them
