Okay, if you write a fan fiction you can merely dismiss that Ponies eat rocks. 

 

Canon Ponies teeth don't look sharp at least, but what kind of crushing strength are we talking here to be able to eat rocks? Are Ponies teeth as hard as diamonds? I guess you can use cartoon logic, but this.

 

With MLP FIM Ponies having these kind of teeth I would be worried about kissing them, (Hey! I'm Commander Shepard if the alien is sapient and pretty I may love it!) if I were teleported into a saucy Human in Equestria fan fiction universe, where everypony loves Humans. I guess, the Ponies wouldn't hurt me, but this has added a worrying issue for me. I mean a Pony could easily kill me with those teeth. But then again cartoon logic may save me and make my body just as strong as theirs.

Only Maud ate real rocks, and let's face it, she's special when it comes to rocks. The rest were only eating rock candy. Some rocks are soft enough to chew, in any case, so it's not so weird. Heck, baby powder is made out of crushed rocks. (Talcum powder)

The clue is her fascination with sedimentary rocks. Calcium carbonate is found in limestone which is a sedimentary rock. Maud must have consumed a lot of it in her young days to get lots of calcium to strengthen her bones and teeth over time, which allows her to eats tougher rocks.

I think that the Mane 6 ate rocks are soft and safe to chew, while Maud was eating rocks that contain a substance that can allow her to have strong bones. You could say that Maud is used to it.

And lets not forget the fact that pinkie use to farm rocks as well before she became a party pony, she also use to have kind of a dull attitude as well, so she may of had the same ability that Maud had before she moved to ponyville, or even still!

 

As far as eating rocks go, I....hm, lets just go with cartoon logic!

 

Lets also not dismiss the fact that she threw a small boulder like a damn cannon ball, and caused a sonic rainbomb like explosion!

There many things about maud that bug me,

the rock eating thing isn't really one of them.

 

it's a cute joke.  it's one part of a running gag, that kinda wears out it's welcome of a one dimensional character.
