My favourites are Rarity, Rainbow Dash, Vinyl Scratch, Octavia, Lyra and Celestia's.

For main characters, I'd definitely say Applejack has the most appealing colour scheme IMO, purely because it's very grounded and simple as well as perfectly embodying her character. It's also more 'realistic' than the others for sure

 

In terms of background ponies, I absolutely love Roseluck's colours.
