Depends what type of dragon it is (west European, Chinese, wyvern...) and how I encounter it.

If I just came across one flying around in the street, I'd watch it from a distance and make myself as discreet as possible. If it walked up to me and started sniffing, I'd spread my hands and let it get familiar with me. If it ran up with the clear intention to attack, I'd try to dodge and call for help.
