food butter or margarine?

Butter by far.

Magerine shouldn't be used as a proper replacement (unless if you really need it and have nothing else then what to do). It have a diferent taste, smell and everything.

Though magerine with fried rice is quite nice. It just fails as a butter replacement.

No no. Just leave it out for 20 minutes first, and trust me, perfection. Also, there's nothing better for frying an egg with.
