Pones enslaved humanity. They defeated us in a great war.

Today, we rub their bellies and give them ear scratches. Our amazing hands saved us from death or being turned into girly horses. 

What other uses could us humans be to our cute pony overlords?

That first part goes without saying but training and arming your slaves to defend you is a terrible idea. The only way to go about it would be to do something similar to what has happened in game of thrones with the Unsullied, which are slaves taken from infancy to the age of 5, castrated, do nothing but train all day and the result is a 75% mortality rate with the remainder being an elite fighting force. That's a huge loss of potential laborers and is only worth it if your slave population is exceedingly high to where you require mass death in order to sustain it.

A human's best physical attributes are height which is negated by Pegasi, and fine manipulation with our fingers, which is negated by Unicorn magic. Ideally I see the species being used primarily for detailed manufacturing and potentially construction. There's also entertainment but only a select few would be skilled enough for this role.

Probably people would do any jobs that the ponies wouldn't want to do, like cleaning bathrooms, working in dangerous underground coal mines, or putting insulation in hot dusty attics.

Honestly I don't see this as being too far-fetched. I mean they do have intelligent talking cows and sheep that don't seem to have fair representation or equal rights..........

I can't see Humans losing to Equestria, with our superior armies, technology, and numbers. So if we were put into this situation, I can see us rising up once more. Either to take down the throne, or to secure our place among the ponies as citizens.
