Actually, their manes are a bit simple, maybe Rainbow's is more attractive.

1-2 Rainbow, Rarity
3- 4 Fluttershy, Pinkie Pie
5-6 Twilight, Applejack

in general, taking into account all the characters; Starlight, Luna, Sunset Shimmer, and Luster Dawn have the best mane

My second pick will be Applejack's for its durability rather than style, which is befitting of her. That thing goes through a lot on a daily basis.

I've always loved Pinkie's and the way she can always hide items of importance in there, but Rainbow Dash is also an obvious choice. I doubt she really tries to maintain it though.

Obviously, I'm required to say Rainbow Dash here.

Rarity's is certainly the most fabulous and fashionable mane, but (on both humans and ponies) I've always preferred natural looks to carefully groomed ones. And lots of bright colors.
