Birds are evolved from a certain class of dinosaurs. So I guess those would taste pretty much like chicken. The others might taste like turtles (not that I know what that tastes like) or lizards (ditto).

It depends on how active they were - they are highly unlikely to taste like chicken, as most chickens are fairly inactive creatures and have very white meat, whilst wild fowl such as pheasant have much browner meat as they are more active and mobile. So, if we are going with the similarity to birds then I'd guess something like ostrich, although it will depend on the era in question (some species of dinosaur predate grass, so as you can imagine the ecosystems were quite different back then and would probably have produced meat of a rather different flavour.)
